Ingredients:
1 cup boiled and shredded chicken breast
1 onion
1 carrots
1 tablespoon tomato paste
4 medium potatoes
1 egg, if desired
Bread crumbs, the amount depends on the mashed potatoes
Salt, pepper and turmeric powder for seasoning
First boil the potatoes. In the meantime, chop the onions finely and sauté in oil in a pan. Chop the carrots into cubes and sauté along with onion. Add in the shredded chicken breast and keep sautéing. At the end, add in tomato paste and seasoning, like salt, black pepper and turmeric powder. Sauté a bit and stir well till well-mixed.
Mash the boiled potatoes well. You can do this in a mixer.
If you add 1 egg the taste will be like Potato Kuku. So you can omit it if you don't like this taste.
In a mixing bowl put the mashed potatoes and gradually add in the bread crumbs. Do not overuse bread crumbs. The amount should be enough so that the mashed potatoes don't stick to your palm.
Heat oil in a non-stick frying pan. When you want make doughnuts, you should first wet your palms. Take 1 tablespoon off the mashed potato mixture and spread in your palm. Stuff it with the fillings, that is sautéed ingredients. Put almost 1deseertspoon of the fillings inside the spread mashed potatoes. Then carefully close the doughnut. Press a little with your palm till round. Put the doughnut in hot oil and fry thoroughly.
Whenever you feel like the mashed potato is sticking to your palm, wet your hands in a bowl of water.
There is no need to over-fry as all the ingredients are cooked. The prepared Doughnut should be golden brown. Repeat this with all the ingredients. Arrange doughnuts in a serving dish and garnish with potato crisps. You can serve with hot tomato sauce. Bon Appetit!
