Ingredients

Courgettes, 2 nos
Potatoes, Medium-sized, 3 nos
Green pepper, 1 no
Garlic cloves, 3
Tomatoes, medium, 2 to 3 nos
Oil for frying
Peel the vegetables, eggplants, courgettes, potatoes and then finely chopped them as well as the green pepper. Put oil in a frying pan and fry the chopped vegetables one by one and keep aside.
To make sauce, grate the tomatoes, grease a pan with oil and put inside the grated garlic and sauté. Then add in the tomatoes and keep sautéing. Stir in a pinch of salt. Taste the sauce and adjust the seasoning. At the end, pour the prepared sauce over the fried vegetables. If desired, you can garnish with yogurt and garlic cloves.
