Ingredients
Rice, 3 1/2 cups
Butter, 200 g
Milk, 4 cups
Saffron, 1 tsp
Sultana raisins, 1 cup
Salt, 1 tbsp
Cinnamon, 1/2 tsp
Chicken fillets, 500 g
Fried chopped onions, 1 cup
Silvered pistachios, 1 cup
Water, 2 cups
Rosewater, 1/3 cup
Procedure
Marinate Chicken fillets inside a plate with onion juice, saffron and salt.
Soak the rice in water for half an hour.
Pour 1/2 liter water and 4 cups milk in a pot and bring to a boil. Drain the water of the soaked rice and transfer the rice into the pot. Add in salt, saffron, and rosewater. When half of the liquid is gone, stir in the butter and let it over the medium heat till milk is thoroughly absorbed to the rice. Put on the lid wrapped in a piece of cloth and allow it 35 minutes to cook.
In a saucepan, sauté raisins with a little butter and a pinch of cinnamon.
Take a frying pan and put inside the marinated chicken fillets and fry in butter. Transfer the rice into an oval platter and garnish with sautéed raisins, fried onions and Silvered pistachios on top. Also arrange the fried chicken on top. Ready! Yum yum! Serve hot with fresh herbs like basil and pickles. Bon Appetit!
