The dish belongs to Shiraz, originally.
Ingredients
You can make 24 Kuftas out of the ingredients.
High-fat yogurt, without salt, 500 g
Melted butter, 50 g
Eggs, 2 nos
Flour, 200 g
Ground wheat, 80 g
Salt, as per taste
Plums, 24 nos
Sugar cubes, 24 nos
Sugar, 4 tablespoons
Butter, 100 g
Bread crumbs, 3 tablespoons
Cinnamon, 1 tsp
Procedure
Mix together yogurt, melted butter, eggs and a pinch of salt and then add in the flour and ground wheat. Knead well to get a smooth dough. Put it in the fridge for 20 to 25 minutes.
In the meantime, cut in halves the plums, remove the seeds and put a sugar cube in the middle.
In a large pot, pour water and a little salt and bring to a boil. Divide the prepared dough into 4 equal parts. Sprinkle flour on the chopping board and role each part into a 3 cm cylindrical shape. Cut each cylinder into 6 parts. That is 24 Kuftas altogether. Rub your palms in the flour and cover each piece of dough round each plum.
Put the balls into a pot of boiling water. You are recommended to do this in 2 stages. Make sure not to overcook the balls.
Once they are floating on the surface of water, reduce the flame to low and allow 10 minutes to cook. In the meantime, put 100 grams butter and sugar inside a frying pan. Add in bread crumbs and cinnamon. Stir well to get a caramelized mixture. Remove the balls, Kuftas, from the pot using a skimmer and arrange in a plate. Spread the mixture over the prepared Kuftas and serve. Bon Appetit!
