Rice and Shrimp is authentic to Bushehr.
Ingredients
Rice
Fried onions
Cleaned shrimps
Coriander, fenugreek and parsley
Black and red pepper
Salt and turmeric powder
Procedure:
Put the pre-soaked rice inside a pot filled with enough boiling water. Strain and keep aside.
Fry the onion chops in oil and sprinkle in a pinch of turmeric.
Clean the shrimps and remove the veins. Wash and drain. Fry in a pan with salt and turmeric. Keep aside.
Wash the aromatic herbs and chop finely. Saute in oil too.
Mix together all the fried and sautéed ingredients and sprinkle in red or black pepper.
Put the strained rice in a pot and fill the mixture between the layers of rice. Continue to the top. Pour in a cup of oil and water all over the rice and close the lid wrapped in a piece of cloth. Reduce the heat to low till well-cooked. Switch off the heat, and transfer to a desired dish. Serve with pickled vegetables. Bon Appetit everybody!
Cooking point,
The amount of fenugreek should be half of the rest of the herbs. Otherwise, its taste will be unbearably bad.
