Shish Andaz is a delicious food favorite to the people in Gilan. Here is a quick recipe. Give it a try if you like.
Ingredients
Ground walnuts, 250 g
Grated onions, 1 cup
Thin eggplants, Medium-sized, 5 nos
Pomegranate paste, 1/2 cup
Salt, a pinch
Directions
Put the grated onion in a pot and fry in 1 tablespoon oil till golden brown. Add in the ground walnuts and sauté in oil as well. Then pour in 3 glassses of cold water and allow the walnuts to cook on the low flame.
Peel the eggplants and cut then into 2 to 3 cm pieces. Sprinkle salt over the eggplants and put in a strainer till their black water is drained. Then fry them in a pan till all sides are golden brown. Add them into the pot. Also pour in the pomegranate paste, not very thick. Keep cooking over the mild heat till settled. The stew should n't be very thick. So check its water to avoid evaporating completely. Transfer to a desired dish. You can serve it with rice. Yummy! Bon Appetit!
