Shami, a kind of cutlet, is popular in Iran and plays a big role in Persian cuisine. Sesame Shami with Chicken Breast is rich in vitamins E,F, D, B and Lecithin due to sesame. Sesame seeds are good for kids and teenagers who are growing up. Sesame contains protein too. Vitamin F protects skin cells, forming supporting layers in the skin.
Sesame seeds are very nutritious and considered hot in old medicine. Its oil is useful for the kids to grow tall and strengthens their brain skills. In this cuisine sesame plays a great role so do not omit it from the ingredients.
Ingredients
Serves 4
1 chicken breast, medium
4 medium potatoes
1 large Onion
1 tablespoon cream or milk powder
1/2 glass finely chopped parsley
4 tablespoons sesame seeds
1/2 glass bread crumbs or powdered toasted bread
Salt, pepper, turmeric, garlic powder, and paprika, for seasoning
Procedure
First, grind the chicken breast till very smooth and soft. No need to cook it first.
Put the ground chicken inside a mixing bowl and add in grated onion. Do not drain its juice.
Grate Boiled potatoes, once they are cool, and add into the bowl.
Note that the amount of chicken and potato should be the same. So make sure to observe this. Add in finely chopped parsley. Sprinkle in the above mentioned spices and season to taste with salt and pepper. Then add cream or milk powder. Mix the ingredients well to get a consistent mixture. The cuisine does n't include eggs. Cream and milk will make the mixture consolidated.
Set a non-stick frying pan on the heat and grease with oil. Allow to heat. Take a walnut-sized piece off the mixture and shape into flat round shapes with your palms. Roll the patties in the plate of bread crumbs and sesame seeds. Cover them well with crumbs and sesame. Put them inside the hot oil and fry nicely on both sides. Once you have made cutlets, transfer them into a serving dish topped with a couple of sesame seeds. Garnish the dish with green sweet pepper and tomato slices. Serve with fresh Persian bread and fresh herbs like basil leaves. Bon Appetit!

To season the bread crumbs you can apply on tablespoon turmeric powder and 1 tablespoon garlic powder.
