Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.
Ingredients:
400 g pureed butternut squash
1/2 cup flour
1 gg, well-beaten
3 tablespoons sugar
1 dessertspoon baking powder
2 tablespoons butter
2 tablespoons oil
1/2 dessertsppoon cinnamon powder
Directions:
Mix butternut squash puree, flour, egg, 1 tablespooon sugar, and baking powder in a mixing bowl.
Put a pan on low flame and melt 1 tablespoon butter and 1 tablespoon oil and allow to heat. Then spread the prepared mixture with your spoon or spatula in the pan and flatten the surface with the back of your spoon. when one side is fried, flip over to fry the other.
in a small bowl, mix together the remaining sugar and cinnamon powder. Once Kuku is ready, transfer to a desired serving dish and sprinkle with sugar and cinnamon on top. Serve with fresh Persian bread. Bon Appetit.
