Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette..

Ingredients:

7 grilled eggplants
5 eggs
1 medium onion
4 tablespoons liquid oil
Salt, powdered black pepper, and turmeric for seasoning

Directions:

Peel the onion and chop finely. Then go over to the eggplants and remove the skins of grilled eggplants. Take a mixing bowl and put the onion and crushed eggplants inside. Sprinkle with salt, pepper and turmeric powder. Crack in the eggs one by one and stir well to get a soft , consistent mixture. Heat oil in non-tick frying pan and then spread he mixture and allow it to cook on low heat. Once one side is fried turn it over to fry the other side.
You can cook the food inside the oven as well. In this case, grease a Pyrex dish with only 2 tablespoons of oil and then put the mixture inside and then lay in the oven.
