Ingredients:
3 large green leek2 tablespoons butter
4 cups chicken stock or vegetable stock, if desired
900 g potatoes, cubed into 3 cm dimensions
1 1/2 teaspoons salt
Marjoram , a little
1/2 teaspoon dried thyme
1 laurel leave
1/4 cup fresh parsley, chopped
1 teaspoon hot red sauce
powdered white or black pepper
Directions:
Clean the green leeks finely. Cut them lengthwise and then wash again till the remaining dirt and germ are removed. Cut away the dark green parts and leave there light green areas. Cut them 3.5 cm long.Take a pot and melt butter on medium heat. Add in the chopped green leek and stir finely. Put the lid on and reduce the heat to low. Allow 10 minutes till leek is soft. Make sure to check frequently to avoid burning.
Pour in chicken stock, and add potato laurel leave, marjoram, dried thyme and salt. Heighten the heat and bring to a boil. Then reduce to low. Allow to simmer 20 miutes till potatoes are done.
Apply an electric masher and mash half of the soup. If you want to have a smooth, consistent soup you can crush all your ingredients in a masher. Add in parsley and allow to cook a few more minutes. Stir in the sauce and pepper as well as salt. adjust the seasoning before taking on to the table. Serve hot. Bon Appetit!
