Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.

Ingredients:

250 g cooked lentils
4 to 5 eggs
4 to 5 eggs
2 onions
3 tablsepoons leafy vegetables including, mint, tarragon, basil and dill
150 g minced meat
Oil or frying
Salt, black pepper powder, turmeric and other spices for seasoning

Directions:

Cook lentils but avoid overcooking as they will crush. Put them in a mixing bowl and add in grated onion as well as ground meat( mutton preferably). Season to taste with salt, pepper, turmeric and spices and crack in the eggs. At the end, add in the chopped vegetables. Mix them well. Heat oil in a non-stick frying pan and then spread the whole mixture all around the dish. Cover it and allow to fry. Once one side is done, go over to the other side. Place in a plate after frying and garnish with vegetables of interest. Serve with bread. Bon Appetit!
