Ingredients
3 large potatoes3 tablespoons olive oil
2 cups onion, finely chopped
2 cups green bell pepper, chopped
2 cups sausages, cubed
1/2 cup parsley , chopped
4 eggs
Salt and black pepper powder or chili for seasoning
Directions:
Wash the potatoes properly and put them in a pot filled with water, without peeling them. Bring to a boil and cook them for 15 minutes. Then remove them and transfer into cold water. Peel and chop finely. Pour 2 tablespoons oil in a frying pan and saute the chopped onion as well as green bell pepper until golden in color. Add in the chopped cooked potatoes and saute 3 more minutes. finally, add parsley and stir well. In another pan saute cubed sausages and then transfer into the vegetables pan. In a bowl, beat the eggs with a fork and sprinkle with salt and black pepper. stir well and add into the pan. Allow on the medium heat till the eggs become firm. It is ready to serve. Bon Appetit!
