Yakhmeh Torosh is an old Isfahani cuisine, which is very nutritious thanks to the existence of apricot, quince and plum.
Ingredients
Serves 6
Dried plums, 30 nos
Apricot slices, 200 g
Quinces, finely cubed, 2 nos
Fresh lamb meat,250 g
Rice, 1 cup
Sugar, 1/2 cup
Turmeric, 1 tsp
Salt, a pinch
Yakhmeh Torosh
Directions
Put the pieces of meat inside a pot, pour over water and sprinkle in turmeric. Set over the heat till half-cooked. Add in plums, Quinces, and apricot slices and keep cooking till these are half-cooked as well. Then add in the rice and allow to settle. Give it enough time till water is evaporated. After that, mash the content of the pot and remove the seeds if any.
Mix well the cooked ingredients and crush with a masher. Add in sugar and transfer into the pot over the heat again till sugar is dissolved. Once ready, remove to a desired plate and serve with fresh Persian bread. Bon Appetit!

The amount of sugar depends on your taste.
You can substitute sugar with dates syrup.
Make sure to remove all the seeds.
