Ash is a Persian cuisine tried in different cities. It is made in many diverse ways. The main ingredients include, beans, peas, lentils, leafy vegetables, the greens, rice and so on. It is actually sort of thick soup or stew.
Ingredients:
Serving 10 to 121 1/2 kg leafy vegetables including, leek, parsley, dill, spinach and coriander
3 large onions
1 cup rice
500 g chickpeas, cranberry beans, and kidney beans
300 g lentils
Salt, lack pepper powder and turmeric for seasoning
1 /25g lamb chuck and shank, bones removed
Oil for frying
Procedure
Soak the grains overnight. Put the pieces of meat, fried onion,rice, as well as soaked grains. Sprinkle with salt, pepper and turmeric powder. Pour in some water and set over the heat till thoroughly cooked. Remove meat and cut into organized shreds with your hand. Put them back into the pot whose contents are now sort of crushed and allow to simmer another half hour. Then stir in cleaned and chopped vegetables. The heat should be low. Remember to stir frequently till thickened and settled. When all the ingredients are all well-done, remove from the heat and ladle into a desired serving dish and garnish the top with fried sliced onion as well as sauteed mint powder.The dish is usually hot-flavored. If desired you can apply animal fat or butter in the recipe as the dish doesn't contain much fat. Cooking duration is 1/5 hours.
If you have no access to fresh leafy vegetables, you can go for dried form. In this case, you should use less tarragon and oregano. Put dried vegetables inside lukewarm water and soak 2 to 3 hours straight. Then strain and apply in your cuisine. If you like finely-crushed ingredients, you can use electric or manual masher to mash the grains entirely.
