Ingredients
Serving 22 small zucchinis, finely chopped
salt , a pinch
Ground black pepper powder, a pinch
2 green onions, finely chopped
1/2 cup flour
1/ cup olive oil or grape seed oil
2 bowls thick yogurt
1 egg
Directions
Wash the zucchinis clean and peel. Then chop nicely and sprinkle with a little salt. Keep aside for a couple of minutes and then wash properly and dry . Beak the egg in a mixing bowl and add in the chopped zucchinis, flour and green onions. Sprinkle with black pepper powder or chili, if desired, and mix well.Pour oil in a non-stick frying pan and turn on the stove and set on low flame. Once the oil is heated, take a spoonful off the mixture and carefully spread in the pan. Repeat with the remaining ingredients. Fry cutlets on both sides and then put in a desired serving dish. Serve with a bowl of yogurt. Bon Appetit!
