Ingredients:
250 g mutton, cut into 2 cm stewing meat1 large onion
1 cup split peas, soaked in water
1 kg zucchinis
1 to 2 tablespoons tomato paste
Salt, lime powder, turmeric and black pepper for seasoning
Saffron, a pinch
Oil
Directions:
In a pot saute cubed onion and then add in the stewing meat and keep sauteing. Put inside the pre-soaked split peas and continue sauteing till the smell of the peas is removed. Add in turmeric powder as well as tomato paste. Keep sauteing since the stew gets thickened as a result. Pour in 3 to 4 glasses f water and as soon as it is boiling, reduce the flame to low and allow the stew to cook well.Wash the zucchinis properly and cut lengthwise or into slices. Then fry a bit in oil. 20 minutes before removing the stew pot from heat, arrange fried zucchinis and season to taste with lime powder, or lemon juice, black pepper, salt and brewed saffron. Allow till the stew is settled. Serve hot with rice and plenty of vegetables. Bon Appetit!
