Ingredients:
Serving 101 tablespoon butter
1/2 cup celery, finely chopped
3/4 cup mushrooms, chopped
1 cup chicken stock
1 tablspoon chopped onion
4 cups chicken, cooked and shredded
3 cups cooked rice
5 green bell peppers
1/8 teaspoon chili
1 1/4 cups Cheddar cheese
1/3 cup green peppers, chopped
Directions:
Melt butter in a frying pan n low heat. Then add in the chopped celery and saute 5 minutes till soft a bit. Also add in chopped mushrooms. After 2 miuntes pour in chicken stock and add chopped onion as well. Bring to a boil on low heat. Stir in the chicken shreds along with cooked rice and stir occasionally till the stock is all gone.Cut bell peppers in half and stuff the inside with the prepared mixture. Then put the other half on top and push firmly to prevent the ingredients from coming out in cooking process. Sprinkle grated cheddar cheese on tops and place them on the oven tray. Cook at 350 degrees Fahrenheit 45 minutes.
