Ingredients:
3 tablespoons olive oil1/2 of whole onion, chopped
400 g grilled tomatoes
3 tablespoons sweet corns
2 tablespoons butter
4 eggs
2 dessertspoons fresh coriander
1/2 dessertspoon black pepper powder
4 tablespoons potato flour
1 dessertspoon thyme
1 dessertspoon basil leaves, chopped
Directions:
First, grease a frying pan in olive oil and add the chopped onions along with sweet corns. Set the pan on low heat.then chop the grilled tomatoes and add into the mixture. If desired, you can apply tomato sauce or tomato juice. After that, season to taste with pepper and salt. Allow 10 miuntes and keep sauteing. Remove from the heat and stir in the fresh chopped coriander leaves and dried thyme and mix well. Set aside.
Put the potato flour in a mixing bowl and pour in some water; make a thin round dough and keep aside. Grease another pan with drops of oil and spread the dough inside the dish. 2 minutes is enough for the dough to prepare.
Melt butter in a non-stick frying pan and make sunny side-up eggs. Place the potato dough in a proper serving dish and lay the eggs on it. Place the sauteed mixture beside the dish. Serve hot with bread. It makes a good breakfast . Bon Appetit!
