Soup is among dishes that you can enjoy in all 4 seasons. Pasta Soup is proper for Summertime.
You might get surprised a bit! Pasta Soup? I don't think it is a bad idea to try it at least once. The thyme-flavored soup can be prepared easily at home.
Ingredients:
1 tablespoon olive oil1/2 cup chopped onion
1/2 cup green leeks ( only white and light green parts should be used)
1/2 cup chopped celery
1/4 cup red bell pepper
3 cloves of garlic
6 cups chicken stock
1 laurel leave
1 teaspoon fresh thyme leaves
1 teaspoon salt
2 cups chopped zucchinis
1 cup green beans, chopped
1/2 cup white beans
1/2 cup pasta, in different shapes of interest
2 tomatoes
A couple of fresh basil leaves
A fistful of grated Parmesan cheese for garnish
Procedure:
Drizzle 1 tablespoon oil in a large pot and set over high heat and then put chopped onion, green leeks, and bell pepper. Saute 8 to 10 minutes till soft. Then reduce the heat to low to avoid burning.
Add in garlic and stir 1 minute till the pleasant aroma comes out. Pour in chicken stock and add leave, thyme and salt. Heighten the heat and bring to a boil. Once boiling, add in chopped zucchini, green beans, tomatoes, white bean, and pasta one after another.
Increase the heat again and let it boil. Then lower the heat. Allow 10 minutes till the vegetables and pasta are cooked. When ready, transfer into a large bowl and garnish with grated Parmesan cheese topped with basil leaves. Serve hot. Bon appetit!
