2 zucchinis
1 medium onion
1 red bell pepper

Directions:
The stuffed zucchini is so eye-catching and delicious that everyone won’t stop his mouth water. Even those who are not into this vegetable, would like it. Perhaps one of the best ways to encourage the kids or even adults, is to make it according to this recipe.
To prepare, you need rich zucchini shaped in cups. Then stuff with cooked vegetables and meat as well as cheese. You can even make substations to adapt it to your own taste; for example, if you are a vegetarian, you can replace meat with rice.
Turn on the oven at 175 degrees Celsius. Chop the onion and bell pepper into cubes. Set a frying pan on the heat and pour in 2 tbsp. olive oil. Add in the chopped vegetables and sauté for about 3 minutes till a bit soft. Grate the cloves of garlic into the pan and keep sautéing for another minute. Then turn off and transfer sautéed vegetables into a plate.
Put ground meat inside the same pan and sauté on mild flame (7 minutes is enough).
Turn the vegetables back into the pan adding salt, pepper, cumin and parsley. Mix well. Add in tomato sauce and chopped basils as well and allow to remain over low heat till evaporated (almost 5 minutes).
Cut zucchinis into cups; each slice should be 5 cm in width. With a spoon and knife empty the flesh but remember not to make holes at the bottom. At least 0/5 cm should be left untouched. It acts like the bottom of a cup. Also don’t forget to over empty the body. If so thin, the ingredients will leak out later.
Cover oven tray with a layer of aluminum foil. Put the cup-shaped zucchinis on the tray. Mix half of the amount of grated cheese with vegetable and meat mixture. Fill in the cups with spoons of the mixture and press well. The cups should be stuffed fully.
Allow in the oven 30 minutes and then bring the oven out. Put the remaining cheese on top of the cups and set back into the oven. Once the zucchinis are soft and delicate and the cheese is melted, the dish is ready. Bon Appetite!
