Ingredients for dough
2 cups flour
1 large egg
1 tbsp. leaven
1 tbsp. sugar
½ cup yogurt or lukewarm milk
¼ cup liquid oil or melted butter
½ cup warm water
½ tsp salt
Ingredients for middle and top layers
1 tbsp. fennel
1 tsp cardamom
5 walnuts
2 tbsp. sesame seeds
3 tbsp. sugar
Mazandarn’s Traditional Bread
The traditional belongs to the city of Amol in the north of the country. The slightly-sweet and stuffed bread is made in a simple way so you can certainly do it. Inside the dough, there is a mixture of walnuts, sugar and cardamom; making it not only nutritious but it also gives an amazing smell and taste.
The tasty bread is well best served as breakfast or as a snack. You can put a piece inside your kids’ bag to consume over the school breaks. Traditionally, it is made in a tandoor. But No worries!
You can go for the oven easily.
Here is the recipe:
Put leaven and sugar in a glass of warm water and allow to rise. Once ready, mix with flour and other ingredients and knead properly. Depending on the type of the flour you use, you might need to add or reduce the amount.
Make sure to put enough flour to get a smooth and even dough. Don’t worry if it is sticky; that’s just the way it should be!
Cover the dough with a neat piece of cloth and let it sit for almost 2 hours.
Put all the internal ingredients inside a grinder except for sugar. A few pulses away till walnuts are ground. Remember not to make powder. Do not use too much fennel as it makes your cuisine bitter. Then add in the sugar as well and mix well.
Take the dough and knead a little bit again. Take an orange size balls off and spread. Place the mixture inside and wrap carefully till it doesn’t get out during baking.
Place the balls in a greased tray. Spread the egg yolk on top of them with a brush and sprinkle sesame seeds. Lay inside the pre-heated oven at 180 degrees Celsius for 15 to 20 minutes.
