Serving 4
Ingredients:
3 tbsp. olive oil
2 garlic cloves, finely chopped
2 zucchinis, grated
1 tsp. salt
½ tsp black pepper
1 egg
3 tbsp. fresh basil leaves, chopped
1 cup bread crumbs
¼ cup parmesan, grated
Ingredients for sauce:
2 tbsp. red pepper, chopped
2 cups tomatoes, peeled and pureed
A pinch of black pepper
A pinch of salt
Directions:
1. in a proper dish heat olive oil.
2. Sauté chopped garlic in oil almost 1 minute.
3. Add grated zucchinis and sauté 10 minutes.
4. Season to taste with salt and black pepper and remove the dish from the heat.
5. Remove the juice as much as possible.
Break in the egg and add basil, bread crumbs as well as parmesan. Mix well. 6.
7. Knead the mixture and make into small balls. Place in the oven tray.
8. Set in the pre-heated oven at 180 degrees Celsius for 10 minutes till golden and crisp.
9. To prepare the sauce, place the red pepper and tomato puree in the mixer and mix to get a consistent paste.
10. Put a dish on medium heat and grease in 1 tbsp. olive oil. Add the sauce and sauté 5 minutes.
10. Season to taste with salt and pepper.
11. Transfer balls (koofta) into a desired dish and cover in red sauce. Garnish with basil leaves on top.
