How to make kadoo-torshak, a traditional Persian curry with zucchinis from the Golestan province of Iran.
How to make Kadootorshak Curry

Ingredients:

1 kilograms zucchinis
500 grams peeled pureed tomatoes
2 onions
2 tablespoons pomegranate seeds
1 tablespoon lemon juice
Salt and pepper to taste
Olive oil for sautéing
How to make Kadootorshak Curry

How to:

Shred the onions and sauté in olive oil until softened. Add the sliced zucchinis. Once the zucchinis are almost done add tomato puree and salt, pepper, pomegranates and lemon juice and stir well and let simmer for 20 minutes. Enjoy!
