Ingredients,
Herbs used in Ghormeh Sabzi like Spinach, leek, coriander, and parsley, 250 g
Mutton, with bones 500 g
Dried lime, 4 nos
Kidney beans, 1 cup
Fried onions, golden in color, 3 tbsp
Eggs, 2 nos
Potatoes, 2 nos
High-fat yogurt, a little, for serving with the dish
Turmeric, pepper and salt, as required
Slightly fry mutton pieces, which contain high fat, in a pot. Add in vegetables, kidney beans or wax beans, fried onions, and season with salt, pepper and turmeric till half-cooked.
Cut dried limes in small pieces and remove their seeds. Put them along with peeled and cubed potatoes inside the mutton contents. At the end of cooking, break 2 eggs separately and mix in the pot, stirring. Turn off the burner. You can consume this Abgusht with yogurt. The traditional recipe caters for 4 to 6 people.
