Procedure
Chop spinach in pieces and put in a pot. Allow it to cook with its own water till tender. Basically, it's better not to overcook or over-fry spinach.
Chop onion and garlic finely and fry in a pan till golden brown. Now it's time to add cooked spinach. If you think how the dish looks in the end is more important than its nutritional benefits, you can transfer cooked spinach in a food processor to crush it thoroughly. But the less crushed and chopped the vegetable, the more the benefits.
Sprinkle in salt and pepper and stir the mixture so the spinach is a little fried. Then break eggs inside the pot and let it take shape. It's ready to serve.

Break the eggs over the mixture and try to retain the yolks as they are. Sprinkle in salt and pepper. Close the lid and allow to cook. Remove from heat before the yolks are hard.
