Okra Abgusht ( also known as Gumbo) is a favorite dish in Ilam Province.
Ingredients
Lamb meat, 400 g
Onions, medium, 2 nos
Okra, 400 g
Tomatoes, grated, 3 nos
Salt, pepper, turmeric and desired spices, as per taste
Tomato paste, 2 tbsp
Directions
Gumbo
Sauté chopped onions and meat pieces in a pan. Then sprinkle in a pinch of turmeric powder and let it cook with a little water. Once the meat is half-done, add in grated tomatoes, and season with salt, pepper and spices. Also add in okra and give it enough time to cook well.
Cooking points,
This Abgusht should contain enough water just like the Persian Abgusht.
The original recipe contains plenty of pepper but if you are not interested, you can adjust it to your own taste.
