The cuisine belongs to Gilan Province, Rasht specifically.
Ingredients
Walnuts, 2 full tablespoons, ground
Butternut squash, 1 cup
Wheat flour, 1 cup
Egg, 1 or 2 nos
Cinnamon, cardamom, ground, 1 tsp each
Salt and baking powder, 1 tsp each
Sugar, 1/2 cup
Kaka
Directions
Cook the butternut squash and peel it. Mix flour and baking powder and sieve 3 times. Add in sugar. You can adjust the amount of sugar depending on the squash. If it is sweet, you can reduce the amount of sugar. Mash the squash. Crack and beat eggs in a bowl with a fork. Drizzle in drops of cold water to make it puffy.
Mix together all the ingredients to make an evenly dough. Allow it to rest in room temperature 1 hour. Shape the dough into small spheres or balls and then flatten in your palms like cutlet. Heat some oil in a pan and once hot, arrange them inside the pan and let them crispy. Once one side is fried, turn it over. Be careful not to crumble the Kaka. After all your ingredients is done, transfer into a platter and sprinkle Silvered pistachios on top. Bon Appetit everybody!
Cooking point,
Instead of butternut squash, you can apply rice flour. Season with sugar, turmeric, cinnamon and saffron. Eggs and water are a must.
