The dish is locally made in the city of Birjand, South Khorasan Province.
Ingredients for flour
Flour, 3 cups
Yogurt, 1 cup
Turmeric powder, 1 tbsp
Black cumin, 2 tsp
Ingredients
Garlic cloves, 2 nos
Oil,2 tbsp
Flour, prepared above, 2 tbsp
Salt and saffron, 1/2 tsp
Walnuts, 6 nos
Water
Black pepper, as required
Cinnamon, as required
Ingredients for meat
Stewing meat, 300 g
Onion, 1 no
Split peas, 1/2 cup
Oil, 2 tbsp
Salt and saffron, 1/2 tsp
Directions
First Pour yogurt inside a large bowl, adding flour gradually. Sprinkle in turmeric powder and Black cumin and make a dough which does n't stick to your palms. Put the dough inside a dish, cover it and let it rest for 2 hours. Then turn it into powder and let it thoroughly dry. Then grind finely. Now the flour is ready!
Directions for Ghormeh
Put stewing meat inside a pot and pour in 2 glasses of water and let it simmer. Remove the mass of bubbles from the meat on top of the pot.
Then add in a whole onion, split peas and oil. And let the contents cook well. At the end of cooking, pour in brewed saffron.
Now Kashk Salari
First fry the chopped garlic cloves in the oil in a pot. Pour in 1/4 cup Water till it starts boiling and garlic chops are cooked. Once the water is evaporated, sprinkle flour into the pot and sauté. Now, pour in water along with prepared stewing meat, split peas and powdered walnuts. Bring it to a boil and let it thicken. Once Serving, sprinkle it with cinnamon and black pepper powder.
In case you don't want to apply meat, beat the egg whites and Yolks and at the end of cooking pour into the pot. Immediately switch off the flame and stir the content.
If you find it hard to prepare the flour which was explained above, you can apply usually flour. Don't drizzle in unripe grapes juice once cooking the dish since your cuisine will turn dark in color. It is served with bread. Bite-sized prices of bread are put into the dish, which is called Tlito in Persian. Bon Appetit!
