Ingredients,
Strained rice, 4 cups
Minced meat, 300 g
Carrots slices, 200 g
Oranges slices, 50 g
Silvered pistachios, 100 g
Silvered almonds, 200 g
Sugar, 100 g
Onion, medium, 1 no
Thick Brewed saffron, 2 tbsp
Animal oil, 200 g
Salt, pepper and spices, as per taste
Now directions!
Put Minced meat in a mixing bowl and mix with grated onion. Knead it with your palms till ready to make small meatballs. Heat the oil in a frying pan and fry the balls till brown in color. Pour in 1/2cup water and cook them over the low flame.
Cook the strained rice over the heat and top it with prepared slices as well as meatballs.
Put 50 grams of orange slices inside a bowl with 2 cups of water over the heat. After 10 minutes, when it starts simmering, strain them and put over the heat with another 2 cups of water. Do this process 3 times and in the fourth time, dissolve 200 grams of sugar in 1 cup of water over the fire and once you get rather thick syrup , switch off the burner.
Put almonds inside the boiling water for half an hour. Then sauté inside the oil.
Do the same with pistachios as well. Sauté slices to give them a better taste and more charming color.
You are recommended to wet them with 3 spoons of rosewater for half an hour to avoid sautéing. Apply it on top of the rice.
You can boil carrots in water. Then slice them carefully and sauté in drops of oil.
Equally, slice the onions and fry in the same oil.
Note that the more the amount of the oil, and the higher the heat, the more golden brown the color.
Once you fried the onions, make sure to put them inside a sieve or spread over a paper towel till the excess oil is absorbed and they get crispy.
Serve the rice topped with slices in a desire platter. Bon Appetit!
