The dish is favorite to the Shirazi. Give it a try! You might fall in love with it too. Here is the quick recipe.
Ingredients
Rice, 1 kg
Pomegranate paste, 1 glass
Walnuts, 1 glass
Sultana raisins, 1/2 glass
Sugar, it's amount depends on the sour taste of the pomegranate paste; the more sour the flavor, the more the amount of sugar
Minced meat, 300 g
Onions, large, 2 nos
Oil
First slice the onions and fry in a pan till golden brown in color. Add in minced meat and sauté till the meat is not raw anymore. Then stir in raisins and ground walnuts, sautéing well. In a separate saucepan, mix sugar and pomegranate paste and bring to a boil, adding 2 tablespoons of oil.
In a pot put some water and bring to a boil too. Put inside the pre-soaked rice and wait till the rice is soft from the outside. Remove the pot from the heat and strain the rice. Then add in gradually part of the boiling mixture of pomegranate and sugar, applying a sieve and mix finely. Then transfer the rice into the pot again and pour in the remaining mixture of pomegranate and sugar. Once steam surrounds the pot, put the fried ingredients, raisins, Onions, minced meat and Walnut powder. No need to pour in oil as the fried mixture contains enough oil but if you are still interested to have a greasy dish , you can apply either butter or animal oil. Cover the pot with a clean piece of cloth to cook well. After a few minutes the dish is ready. Transfer into a platter and serve with fresh vegetables. Bon Appetit!
Note, you can make meatballs with the minced meat and put them inside the rice. This way your cuisine would be much more charming and mouthwatering.
