Ingredients
Serves 6 to 8
Carrots, 1 kg
Rice, 6 cups
Sugar, 200 g or 1 glass
Liquid Oil, for frying, 6 tbsp
Minced meat, 500 g
Saffron, finely ground, 1 tbsp, and a pinch for putting on top of the rice
Onion, medium, 1 no
Cinnamon, 1/2 tbsp
Salt, as per taste
First clean the rice and soak in a bowl of salted water. Remove the skin of carrots with vegetable peeler. Wash and cut into thin slices with a knife.
You can also apply a box grater. Take a frying pan and grease with drops of oil. Let it heat well over the flame. Then put inside the sliced or grated carrots and sauté. In the meantime, dissolve sugar in a cup of boiling water and pour inside the pan. Let the carrots cook a bit in the syrup over the medium flame. Add in ground saffron powder and let it simmer for a few minutes. Switch off the burner. The mixture for putting inside the rice is now ready.
Peel the onion and after washing it, grate it over the minced meat. Sprinkle over salt and cinnamon and knead well inside a mixing bowl. Shape the mixture into small meatballs. Drizzle oil inside a saucepan and put the meatballs inside and fry over the heat.
Combine the fried brownish meatballs with the prepared carrots.
In a pot, bring some water to a boil and put inside the pre-soaked rice. Let it simmer for a few moments and then strain the rice. Take another pot, certainly large one, pour 1/2 cup of combination of oil and water and then arrange pieces of Lavash bread, which is a thin Persian kind of bread, at the bottom of the pot or you can do it with rings of potato. Put a layer of the strained rice over and top it with a thin layer of the mixture of carrots and meat. Repeat this so all the rice and mixture are over. At the end, pour another cup of oil and water. Cover the pot with a piece of cloth wrapped all over the lid. Let it cook on the low heat. In the meantime, put some Silvered pistachios along with a pinch of saffron powder in a saucepan greased with oil and sauté for a couple of moments.
Once the rice is well-done, remove to a desire platter and top it with sautéed pistachios and charming saffron.

Instead of mixing the meatballs in the mixture of carrots, you can simply garnish the rice platter with them.
Some would prefer to do the recipe with chicken. So you can replace the meat with chicken. This way, you would need 1 whole chicken or 1 1/2 kg of chicken.
