The cuisine is tried in East Azerbaijan, Tabriz to be exact.
Ingredients
Grapes leaves, small and thin, 500 g
Herbs like leek, parsley, dill, oregano, and green onions, 500 g altogether
Split peas, 1 cup
Rice, 1 cup
Wheat groats, 1 cup
Onion, large, 1 no
Salt, pepper and turmeric, as per taste
Ingredients for the sauce
Yogurt, 1/2 medium bowl
Garlic cloves, crushed , 5 nos
Tomato paste, 3 tbsp
Onion, 1 no
Salt, pepper and turmeric, as per taste

Directions
Clean the herbs agnd wash finely. Then chop. Cook split peas, half-cooked to be exact.
Take a large bowl and mix together split peas, washed rice, wheat groats and herbs. Add in a little salt and mix well.
Pour Oil in a frying pan and fry the onion, adding turmeric and red pepper. Transfer fried onion to the large bowl as well. The mixture makes the fillings.
Wash the grapes leaves carefully. Make sure not to ruin or tear them. Strain in a colander till the water is drained.
Stuff each leave with enough mixture from the bowl and wrap it carefully. You can wrap in your desired shapes but make sure to tie firmly so the fillings don't come out. You can shape them into 5-sided shares, rectangles or any thing of your choice. But do it carefully to wrap firmly.
Take a non-stick pot and arrange the stuffed leaves on the bottom. The smaller, the better. Do it in different layers until the ingredients are over. Pour in 2 glasses of boiling water. Note that it should be boiling to avoid them falling apart.
Put a small-sized lid on the stuffed leaves and press a bit to fill the spaces in between. This way, you will make the stuffed leaves firm in their place until the end of cooking. Then put the lid of the pot itself and reduce the heat to low. It will take about 2 hours to get ready.
Now you should make the sauce. In a medium bowl, whisk yogurt till a little watery. Then add in crushed garlic and mix well. Take a saucepan and fry slices of onions in oil. Season to taste with turmeric, pepper, salt and tomato paste and sauté well. Bon Appetit everybody!
