Meat and Beans is a traditional dish made in copper pot in Isfahan in the old days. Its gravy was served with pieces of bread drenched in the gravy. This is what the Iranian call Tirid.
Ingredients
Serves 4 to 6
100 g lamb meat, spare ribs is preferred
500 g Herbs such as leek, parsley, and fenugreek leaves
2 cups white beans
1/3 cup rice
1 Onion
Salt, black pepper and turmeric powder, for seasoning
Procedure :
Take a medium sized pot and fill half of it with water. Set on the high heat and bring to a boil. Clean the meat and wash. Put inside the pot along with one whole onion, salt and pepper. Remove the bubbles from the meat. Then add in white beans and turmeric powder and allow till meat and beans are half-cooked. ( half an hour in pressure cooker and 1 hour inpot). After that add in the soaked rice.
Clean the herbs and wash them properly in a colander. Allow the excess water to drain. No need to chop them , just cut leek into 2 to 3 pieces, and add into the pot. Remove the onion from the pot. Adjust the seasoning, salt and pepper.
Once ready, pour the gravy into a bowl and serve meat and beans separately. Serve hot with fresh Persian bread, fresh basil and pickled vegetables. Bon Appetit!
Cooking points,
If desired, you can add one medium potato when adding rice. It will thicken the dish.
Do not chop the herbs. Just remove the stems. Cut leek into 2 or 3 parts.
You can apply dried fenugreek leaves, 1 dessertspoon, to give it an aromatic smell.
