Ingredients
500 g Ground meat1 medium onion
Salt, pepper and turmeric for seasoning
1 tablespoon tomato paste
250 g mung beans
2 tablespoons fried onions
1 tablespoon lemon juice
3 medium potatoes
1 tablespoon saffron
Oil for frying
Procedure
Grate the onion and mix well with ground meat, and sprinkle with salt, turmeric and pepper. Make meatballs, walnut-sized, and put inside the fridge. Wash the mung beans and put in a pot with 3 glasses of water, tomato paste and fried onion. Allow to get half-cooked over the medium heat.Remove the meatballs and sauté a bit in a pan. Then add into the boiling pot. Close the lid and allow to settle. If you think the stew's water is not enough, add in a little boiling water. In the meantime, chop up the potatoes and then fry in a frying pan. At the end, season the stew to taste with saffron, lemon juice, salt and pepper. When ready, transfer into a serving dish and arrange the fried potatoes round the dish. Serve hot. Bon Appetit!
Cooking point,
Instead of the ground meat, you can apply lamb, or calf meat, in stewing form. This case, you'd better first cook the meat and then add in the mung beans to prevent them from crushing.
