Ingredients,
Artichoke or celery, 1 kg
Flour, 125 g or 1 cup
Salt and black pepper powder, as required
Caraway, 1 tsp
Baking powder, 1 tsp
Eggs, 2 nos
Water or milk, 1/2 cup
Butter, 3 tbsp
Brewed saffron, 3 tsp
Oil for frying, 2 cups
Remove thorns of the artichoke plants and then wash nicely. If you go for celery, remove its annoying stripes. Cut them in 3 cm pieces. Put flour inside a deep bottom bowl and sprinkle in salt, black pepper powder, caraway and baking powder. Mix them well.
In another dish, mix together eggs, milk, oil and brewed saffron. Add the mixture to the flour bowl and stir enough to get a mixture which resembles yogurt in consistency.
Then dip the cut artichoke or celery pieces in the prepared mixture and fry them each in a frying pan with hot oil. You can serve it with Katteh, cooked rice, and strained yogurt.
