Ash is a kind of Persian thick soup. The recipe belongs to Golestan Province.
To make the dish, first sauté meat along with onions and tomatoes. Then pour in water, salt, pepper and rice and put it over a slow flame until it settles. After 2 to 3 hours Ash is ready. Garnish it with fried mint.
