Recipe 1
Ingredients for 4
Lamb spare ribs, 1 kg
Onions, finely chopped, 2 nos
Garlic cloves, 1 no
Black pepper powder, 1/2 tsp
Sumac, 1 1/2 tsp
Tomato paste, 1/2 tsp tbsp
Olive oil, 3 tbsp
Ingredients for garnishing
Hot bread, as required
Onions, sliced, as required
Parsley, finely chopped, as required
Sour lemon, as required
Tomatoes, as required, grilled

Procedure
Cut the spare ribs into 10 by 15 cm pieces. Remove its excess fat. Put onion chops inside a deep bowl. Crush the garlic and mix together with black pepper powder, half of the above mentioned sumac, tomato paste, olive oil and chopped onions. Then put spare ribs inside the bowl and mix thoroughly till meat is well covered in the mixture. Put it in the fridge for 12 hours until soft and nicely marinated. Put pieces onto the skewers and onto the grill with a low flame until red brown in color and well-done. Put the kebabs inside a platter and garnish with the ingredients mentioned above. At the end sprinkle sumac over the dish.

Ingredients,
Lamb spare ribs, 1 kg
Wide skewers, 3 to 4
Tomato paste
Lemon juice, salt, pepper, oil, and saffron
Procedure
First, take spare ribs and then put them onto 4 skewers altogether at once in a way it not only could bear the meat weight but also it retains its shape.
Then, hit continuously the meat with the back of a keen knife. You can see in the picture below how it is spread. Put the skewers inside the fridge for several hours.
Once meat pieces rest enough in the fridge, put some oil inside a pan and heat. Then add large amount of tomato paste, frying. Also add in a pinch of salt, pepper, some lemon juice, mixing well until thick sauce is prepared.
Once grilling the meat ribs over charcoals, medium flame, cover them with a brush dipped in thick sauce. Make sure every part is well covered. Then grill them one after the other. Once grilled ribs are ready, dip them in the sauce again and put inside bread swiftly. Garnish with onion slices and lemon or orange rings.
