Kal Kabab is an appetizing dish in the north of the country which is made out of eggplants, sour pomegranate juice, vegetables, garlic and walnuts. It is served with Katteh and . Also some consume it as pickle along with other foods.
Ingredients for 2,
Eggplants, large, 4 nos
Sour pomegranate juice or verjuice or pomegranates seeds,1/2 cup
Fresh or dried herbs like mint, Khalvash, and Shoshagh, chopped thinly, 1 tbsp
Fragrant herbs like Shoshagh and Khalvash are found in the north of the country and you can't get them everywhere. Instead you can apply mint leaves only.
Garlic bulb, half of one
Salt and pepper, as required
Ground Walnuts, 75 g
Procedure
Now it's time to remove the skins. If you put the eggplants inside the cold water, you can easily peel them off.
If they got seeds insides, remove them too.
Then crush their flesh with a masher.
After that grind the garlic cloves.
Chop the herbs thoroughly after washing and draining them. Finely mix the crushed eggplants, garlic, chopped herbs, salt , pepper, and sour pomegranate juice or verjuice, as well as ground walnuts. The dish is ready to serve.
