Omach Ash is an authentic dish in Kerman.
Ingredients,
Beets, 500 g
Lentils, 2 glasses
Onions, 2 nos
Wheat flour, 500 g
Black cumin, dill seed, ajowan, and caraway for seasonings
Fried mint powder, Talaf (or Ghara Ghorut ) or vinegar for seasoning
Greens like spinach, as required
Herbs like parsley and coriander, as required
Salt and turmeric powder, as per taste
Fried powdered mint, for garnishing
Ghara Ghorut is a subsidiary diary product which is traditionally made out of Doogh. It is really sour and brownish.
Procedure
Mix flour with a bowl of water and sift. Add sifted flour into the rest of the ingredients gradually, stirring well until thin in consistency. Ash should n't be thickened at all. Take 1 Onion and chop finely. Then fry it with turmeric and pepper powder. Put them into the pot as well. Make sure to keep on stirring to prevent it from thickening. Give it 15 minutes to settle. Turn off the burner and transfer Ash into a desired bowl. Garnish with fried mint powder and garlic. Bon Appetit!
To prepare fried mint, first chop a garlic cloves finely and sauté well in oil, turmeric and powdered mint.
