Ingredients,
Mutton or calf meat, chopped in equal size, large, 500 g
Walnuts, ground, 100 g
Pomegranates paste, 3 tbsp
Onion, 1 no
Garlic cloves, 2 nos
Frying oil or olive oil, 1/2 glass
Parsley, coriander, and tarragon, chopped, 3 tbsp
Salt and pepper, as required
Procedure,
Mix oil, grated onion and garlic, finely chopped herbs, ground walnuts, pepper and pomegranate paste in a bowl. Then add in mutton pieces to the mixture (sprinkle salt during the cooking to prevent kebabs from getting tough.)
Cover the dish and put in the fridge for 2-3 hours until the mixture is absorbed in meat. After this, pierce mutton pieces onto skewers. You should put a distance of one knuckle between the pieces. It makes them cook better.
Put the skewers over the barbecue or fire. Once they are a little done, sprinkle salt over them to make them crispy. The best way to cook any sort of kebabs is fire by charcoal. You can serve tasty and delicious Torshi Kebab with saffroned rice or bread.
