It is an authentic dish in Kermanshah.
Ingredients,
White beans, barley, and broken rice, 2 cups each
Lentils, 3 cups
Groats, 1 cup
Onion, 1 no
Chickpeas, 1 cup
Fried onions, 1 1/2 cups
Lamb meat, 1 kg
Animal fat, 1 cup
Bones stock, as required
Cinnamon, for garnishing
Procedure
Cook finely meat and onion with enough bones stock, about 10 cups. Separately cook grains. Keep aside part of the cooked grains. And crush the remaining with cooked meat. Mix them well. Sprinkle salt, pepper and turmeric and let it give good taste to the mashed mixture. Transfer to a pot with bones stock and add in the untouched cooked grains as well. The heat should be medium. Stir continuously. Since it is cooked with bones stock, it might swiftly stick to the bottom. Keep on stirring till it is thick and settled. Pour half of the animal fat ( oil) and mix again. Turn off the heat. Serve it hot and pour in your desired dish. To garnish, apply the remaining animal oil, fried onions and cinnamon. You won't ever forget the taste of the cuisine.
