The dish is locally made in Tehran Province.
Ingredients
Split chicken, 1 no
Dried lime powder or dried unripe grapes powder, 2 tbsp
Onions, fried, 3 tbsp
Lavash, 2 to 3 nos ( Lavash is a round thin loaf of bread)
Mayonnaise, 3 tbsp
Salt, and pepper, a pinch
Oil, a few drops
Directions
Cut Chicken into pieces and put into a saucepan. Pour in 1 glass of water along with fried onions, salt, pepper and 1 spoon of dried unripe grapes powder (or dried lime powder). Keep the heat to the medium and once the water starts thickening, keep 3 to 4 spoons of the stock away and let the chicken cook till all the water is entirely evaporated . Once cool to handle, remove the bones and shred the pieces. Put a small pot and put inside the shredded chicken. Pour over the remaining stock, 3 to 4 spoons, and sprinkle in unripe grapes juice and add the mayonnaise sauce, stirring.
Take 2 loaves of Lavash, and put one over the other. Cut it like a round plate with a pair of scissors. Now spread the chicken mixture over the bread and connect the edges together from four sides, making it firm with your fingers so the mixture does n't penetrate out. Stuff the round pieces of bread with the fillings until all your ingredients are done.
Choose a Pyrex dish and grease the bottom. Put the bundles of stuffed bread inside it and put the dish into the oven at 175 ° Celsius. Cook it for 10 to 15 minutes till the bread is crispy and brown. Once ready, transfer the stuffed pieces of bread into your desired platter and garnish with reddish, green onions, and fragrant herbs like, leek, parsley, and basil.
