The dish belongs to Gilan Province, Lahijan.
Ingredients
Minced meat, 250 g
Potatoes, Medium-sized, 3 nos
Onion, medium, 1 no
Egg, 1 no
White flour or bread crumbs, 1 tbsp
Tomato, 1 for each person
Tomato paste, 2 tablespoons
Salt, pepper and turmeric for seasoning
Grate the onion and potatoes in large size. Take a large mixing bowl and combine together minced meat, bread crumbs , black pepper, and turmeric and crack in the egg. Mix well. Take a tangerine-sized piece off the mixture and shape in your palms like on oval. Heat the oil in a non-stick frying pan and put the cutlets inside. Once one side is fried flip over to do the other side as well. But be careful not breaking them apart. Keep the cutlets aside in a plate. In a large saucepan, sauté tomato paste in drops of oil and season with turmeric. Stir till charming in color. Pour in 2 glasses of water and let it boil. Once boiling, reduce the flame to low and put in the fried cutlets carefully. If desired, squeeze lemon juice inside and let it simmer again. Taste it to adjust the seasoning.
The dish is almost ready now. In Gilan, it is served with potato crisps , olive, or pickled olive. Cut the tomatoes lengthwise and either fry in oil or grill. Garnish your plate with appetizing fried tomatoes all around the plate. Serve with rice. You can't ever forget the taste. Bon Appetit everybody!
Cooking points,
Don't apply the boiled potatoes since they might fall apart and ruin cutlets. The cuisine should be prepared on the low steady heat till settled.
Furthermore, the water will be absorbed into the cutlets. So pour in enough water till it is juicy at the end.
