Making dishes from other areas might sound bizarre to the people of other countries or regions since they are not used to it. But if you put them on your menu every now and then, it might worth a try.
Ingredients
Chicken, cleaned, 1 no
Garlic cloves, crushed, 3 to 4
Herbs, chopped, 1/2 kg
Oji, A local herb, 1/2 kg
Prunes, soaked, 150 g
Tomato paste, 2 cups
Sugar, 2 to 3 tbsp
Onions, chopped, 2 to 3 nos
Oil, a few spoons
Parsley, leek, fenugreek, 1/2 kg altogether
Procedure
  Mazandarani Stuffed Chicken
Heat 2 to 3 spoons of oil in a frying pan over the low heat and fry the chopped onions till golden brown in color. Then add in pressed garlic. Also stir in the tomato paste , soaked prunes and the herbs, Oji, parsley, leek and fenugreek and sauté till well-mixed. Stuff inside the chicken with half of the prepared mixture and connect the edges together with a needle. Then drizzle in 3 to 4 spoons of oil in a pan and heat over the mild flame. Sauté the stuffed chicken in oil and after a few seconds, pour in 3 glasses of water. Take the remaining mixture, add in sugar and transfer to the pot with the stuffed chicken. Put the lid and give it enough time to cook.
Once, the chicken is thoroughly done, transfer it to your desired platter topped with the thick gravy. Bon Appetit!
