Ash is a traditional dish in Iran, it resembles soup but far thicker and with a variety of vegetables.
Ingredients
Turnips, 1,500 g
Rice, 200 g
Onion, fried, golden brown, 3 tbsp
Minced meat, 500
Lentils, 75 g
Turmeric powder, 1 dessertspoon
Oil, 150 g
Pepper, and salt ,a pinch
Take Minced meat and mix with a little salt as well as grated onions. Knead well until mixed well and sticky. Make small meatballs and fry in a pan with drops of oil. If you use stewing meat, sauté them with fried onions. Pour in water and add lentils. Let it cook over the mild flame in a pot.
If you use meatballs , it will take less time to cook. Peel the Turnips and chop in tiny pieces and transfer into the cooking meat. Wash the rice and add to the pot along with seasonings of turmeric, salt and pepper on the low heat. Stir occasionally till all ingredients are mixed and Ash is settled.
Once ready, transfer Ash into a serving bowl and top it with fried mint powder. The ingredients serve 10 to 12 people.
