Fruits Ash is an authentic dish in Azerbaijan especially, Ardebil Province. The cuisine is tried on the last night of the old year, known as Chahar Shanbe Suri.
Since it contains dried fruits such as apricots, prunes, cherries, and plums it is a light meal which cleans the digestive system.
To cook it, there is no need to apply fresh herbs but if desired, you can add in leek, parsley, coriander, and beets leaves. But the recipe do sent include herbs.
Ingredients
Kidney beans, 1 cup
Chickpeas, 1 cup
Lentils, 2 cups
Rice, 1/2 cup
Hulled wheat, 1 cup
Persian Reshteh noodles, 350 g
Ground meat, 500 g
Dried prunes, 200 g
Dried apricot leaves, 200 g
Dried yellow plums, 200 g
Dried cherries, 200 g
Dried stew plums, 200 g
Salt, pepper and turmeric, for seasoning
Onions, 2 nos
Tomato paste, 2 tablespoons
Herbs like, leek, coriander, parsley and beet leaves, 1 kg, if desired

Procedure
Soak Kidney beans and chickpeas overnight. Put them inside a pot and let cook. Once they are half-cooked, add in lentils and hulled wheat to cook together.
In another pot, put the chopped onions and fry in oil until golden brown. Then sprinkle in salt, pepper, turmeric and tomato paste and sauté for a couple of moments.
Add in the rice along with some water into the fried onions.
Take a mixing bowl and combine together minced meat, grated onion and seasoning, salt, pepper and turmeric. Make small meatballs out of the mixture and add into the pot of rice and onions. Then stir in finely chopped herbs along with chopped beets leaves. After that, add in the cooked grains and stir well. Once all the content is cooked, add in dried fruits along with Persian Reshteh noodles. Stir occasionally to avoid sticking. Allow till Ash is settled.
Once ready, switch off the stove and transfer to a desired large bowl. Garnish the bowl with sautéed mint powder, fried onions and soaked fruits on top. Serve hot with fresh Persian bread. Bon Appetit!
Cooking points,
You should soak the grains overnight. Since they not only get cooked quickly but also they don't cause flatulence and stomach gas anymore.
Soak the dried fruits in cold water for half an hour.
During the cooking, keep stirring to avoid sticking to the bottom.
