The dish is favorite to many people in Mazandaran. Its ingredients contain only vegetables so vegetarians will love it.
Ingredients
Potatoes, 3 nos
Zucchinis, 5 nos
Tomatoes, 5 nos
Onions, 2 nos
Garlic clove, 1
Eggs, 3 nos
Oil
Salt, pepper and turmeric for seasoning

Directions
Take a frying pan and drizzle drops of oil and set on the heat. Sauté chopped onions and garlic for a couple of minutes. Add in salt and turmeric powder. Chop the potatoes into tiny cubes and put into the pan. Reduce the heat to low and close the lid. Allow 5 to 10 minutes to cook. Cut the zucchinis into slices and add into the pan as well and saute for a couple of minutes. Once the zucchinis change in color, add in finely chopped tomatoes. After that crack the eggs inside a bowl and beat well. Add the beaten eggs onto the ingredients and reduce the heat to low. Put the lid and allow 10 minutes. The last step is to sprinkle black pepper powder and adjust the seasoning. A couple of moments and remove the pan from the flame. Transfer into a large plate. You can garnish the dish with chopped parsley, Parmesan cheese or strained yogurt.
Serve hot with fresh Persian bread. Bon Appetit!
