Ingredients
Oil for frying
250 g Ground lamb meat
5 tomatoes
250 g Potatoes
2 onions, grated
3 Garlic cloves, grated
1 egg
3 tablespoons chickpea flour
Salt, black pepper and turmeric powder, for seasoning
1 tablespoon Green caraway powder
3 tablespoons parsley, finely chopped
First, grate onion and potatoes in a mixing bowl and then add in ground meat, one egg, and spices. Knead the mixture well 5 to 10 minutes. Add in chopped parsley and caraway powder. And finally, add in the chickpea flour. Keep kneading till you get enough consistency and stickiness. Set a non-stick frying pan on the heat and grease with frying oil. Allow to heat. Reduce the flame to low and take 2 tablespoons off the mixture and shape into a patty, round or oval. Put the patties inside the pan and when one side is fried and crispy turn over to do the other side as well. At the end, put the tomato rings in oil and sauté them too. Switch off the heat and transfer cutlets into a serving dish. Serve with fresh Persian bread, like nutritious Sangak, ketchup sauce and fresh basil leaves or parsley. Bon Appetit!
