Ingredients
1 cup mung beans
2 boiled potatoes
1 or 2 cloves garlic
1 onion, medium
2 to 3 tablespoons aromatic herbs such as coriander and parsley
1 or 2 eggs
2 to 3 tablespoons bread crumbs
Salt, pepper and turmeric powder for seasoning
Wash the mung beans and put in a saucepan of water and allow till half-cooked. Once it's water is gone, put inside the food processor along with cooked potatoes. Add in grated onion and garlic. Put the mixture in a proper mixing bowl and add in the finely chopped herbs. Crack in the eggs and season to taste with salt, pepper and turmeric. Mix well with a spoon.
Add in bread crumbs gradually. The mixture should be consistent to shape into your desired shapes. If needed, crack in the egg.
Make patties with your palm and put in hot oil in a non-stick frying pan. Fry both sides till brown and crispy. Transfer cutlets into a serving dish and garnish with parsley leaves. Serve with fresh Persian bread, preferably Sangak. You can make a hot tomato paste for a better flavor. Bon Appetit!
