Nafeleh is one of the authentic and traditional foods tried in Khuzistan. Its main ingredients include, minced meat and chickpea flour. Here is the recipe.
Ingredients
Ground meat, 500 g
Chickpea flour, 500 g
Onions, large, 2 nos
Salt , pepper and turmeric powder, for seasoning
Vinegar, 1 cup
Sugar, 2 cups
Butter or oil for frying
Dried mint, 2 teaspoons
Water, 5 cups
Procedure
In a mixing bowl, mix together the ground meat, 2 grated onions, chickpea flour, salt , pepper and turmeric powder. Combine well. Pour in a little water to make it soft and sticky. Do not add too much water. Knead the ingredients with your palms and shape part of the mixture into flat circles, making a tiny hole in the center. Chop the 2 remaining onions well and fry in a large saucepan. Sprinkle in turmeric and salt. Pour in the water and add the ground mint as well.
Also add in sugar and vinegar and give it 20 minutes over the heat. Bring to a boil. Then add the fried circles, known as Nafeleh, into the boiling liquid. Reduce the flame to heat and cook for 30 minutes. Once ready, transfer into a large platter and garnish with pieces of walnuts on top. Serve with fresh Persian bread. Bon Appetit!
